Recipe: Bacon Egg & Cheese Ring

One mistake I’ve made with my children is in the breakfast department.  I always feed them the same thing.  Bacon, eggs and hashbrowns, oatmeal, pancakes or cereal.  So whenever it comes to trying something different, they refuse.  My husband made a comment the other day about how diverse my dinner selection is, why don’t I try the same thing with our weekend breakfasts?  Thank you Pinterest for all your fun ideas!  This one was easy and a hit.  Maybe not super healthy, although I did trade out pork bacon for turkey and used reduced fat cheese.

  • 1 can of crescent rolls
  • 5 Large Eggs, Scambled
  • 8 Pieces of turkey bacon, cooked.
  • 1 Cup of cheese, whatever kind you desire

Heat oven to 375. Scramble eggs on stove top.  Lay out crescent rolls on parchment lined pizza pan or large cookie sheet sprayed with non-stick cooking spray. The longer sides of each crescent on the inside with the pointed ends pointing out.  Place cooked bacon on the inside center of ring.  Top with 1/3 of the cheese, scrambled eggs, season with salt, and remaining cheese.  Fold pointed tips of each crescent over the filling and join the center, pressing points down so they all seal together.  Place in oven and bake 15-17 minutes or until golden brown.  Slice in between each crescent to make 8 pieces.  Enjoy!

Happy eating friends! ~Trina
